Fourth, there is a full catering truck included with the business that is underutilized. That needs to be marketed better to push for more catering business and special events. Finally, once those two stores start throwing off cash, start to expand the business to other locations as corporate owned stores. Adele and I took home over $100K, another waitress took home 50K, one cook took home 25K, another 30K and various part time bus and dish people took home the rest. So who says you can't do a good business out of such a small location in the middle of nowhere?! When we left Chicago we wanted to downsize a little bit, so going from 5,000 sq ft to 800 sounded good. But before we knew it, we had lots of employees (10) and we were open 7 days a week! So, we downsized again and ran it with just ourselves. We closed for lunches and were open just for dinner Tuesday through Saturday from 5 to 7pm and guess what? We still made money! Rent is only around $1000 a month. Propane costs around $400 a month, electric $300, phone $100 and then there's insurance. Your biggest cost is going to be the food and drinks you serve. We have a full liquor license so we have lots of wine, some beers and quite a collection of premium spirits. The food is classic comfort food with a few twists.
