That was 7 days a week, lunch and dinner (but we only worked 5 days). We've downsized the staff ((to one) and have kind of semi-retired since then. Last year we were open only five nights a week for dinner from 5 to 7pm and we still brought home $50K. That's right open for just 10 hours a week. We went hiking in the morning, swimming, ate out for breakfast and lunch then went to work and made some money! You can too! Work all day and make lots more money! When we took over this space it had been a series of restaurants and they all ended up going out of business. Don't let that scare you. It didn't scare me! When we opened a restaurant in Chicago that space was also a series of restaurants that went out of business. You gotta have good food! Great food is preferable! And all with good value! Then hit them with outstanding service and they'll be happy to come back, and keep coming back, for more! Cornville, Az may seem a little remote. Some people think its the middle of nowhere, but I think its in the middle of everywhere! We have lots of regular customers from Sedona, Cottonwood, The Village of Oak Creek and, of course, Cornville itself! People come from as far as Prescott, Flagstaff, Phoenix and even Canada! Its a long commute for those Canadians, but whenever they're in town for vacation, they are sure to stop in. We've got a lot of local, regular customers. Tourists are icing on the cake! Let's talk numbers for a little bit. My wife and I are living debt free. We don't live in a little shack with a composting toilet. We have a nice home with a pool and hot tub in the back, solar panels on the roof, an electric car and two hungry cats! My 5,000 square foot restaurant in Chicago grossed around $950K a year. My 800 square foot restaurant did $425K one year! So I did about half as much in sales in 1/6th the size restaurant! Payroll was $225K that year. Adele and I took home over $100K, another waitress took home 50K, one cook took home 25K, another 30K and various part time bus and dish people took home the rest. So who says you can't do a good business out of such a small location in the middle of nowhere?! When we left Chicago we wanted to downsize a little bit, so going from 5,000 sq ft to 800 sounded good. But before we knew it, we had lots of employees (10) and we were open 7 days a week! So, we downsized again and ran it with just ourselves. We closed for lunches and were open just for dinner Tuesday through Saturday from 5 to 7pm and guess what? We still made money! Rent is only around $1000 a month. Propane costs around $400 a month, electric $300, phone $100 and then there's insurance. Your biggest cost is going to be the food and drinks you serve. We have a full liquor license so we have lots of wine, some beers and quite a collection of premium spirits. The food is classic comfort food with a few twists. Of course, as new owners, you can change anything! Just make sure its good and priced for good value!
