Baja Fresh is a fast-casual restaurant that serves meals that are a far cry from those of typical fast-food chains. Instead of burgers and fries, Baja Fresh serves healthy Mexican-style options made from all fresh ingredients. In addition to serving restaurant-style food, Baja Fresh also provides a comfortable environment in which patrons can sit down and enjoy a relaxing meal. However, though relaxing and comfortable like a typical sit-down restaurant, Baja Fresh is quick and convenient, making it easy for on-the-go diners to come in, eat and leave as soon as possible.

Baja Fresh stands out from other fast-casual joints in that it takes extreme measures to ensure freshness in every bite. This means that not a single item comes from a freezer, is put in a microwave or comes from a can. Seriously! No Baja Fresh location owns a can opener, microwave or freezer.

The founders of Baja Fresh were, like many Americans in the 80s and 90s, raised on fast food. However, after growing up eating at greasy joints, they realized it was time for a change in the fast-casual industry. They wanted to create a place in which heavily-processed, dehydrated and frozen foods were nowhere to be seen and instead, in which all food items were made from fresh ingredients daily.

In addition to wanting to provide fresh menu items, the founders also envisioned a fast-casual restaurant that felt different than other fast-food restaurants. Cue the patios, bright lights and comfortable seating.

After working on their vision, the founders finally opened their first restaurant in August of 1991. The original served fresh, traditional fire-grilled Mexican favorites, which it continues to do to this day.
