Its a long commute for those Canadians, but whenever they're in town for vacation, they are sure to stop in. We've got a lot of local, regular customers. Tourists are icing on the cake! Let's talk numbers for a little bit. My wife and I are living debt free. We don't live in a little shack with a composting toilet. We have a nice home with a pool and hot tub in the back, solar panels on the roof, an electric car and two hungry cats! My 5,000 square foot restaurant in Chicago grossed around $950K a year. My 800 square foot restaurant did $425K one year! So I did about half as much in sales in 1/6th the size restaurant! Payroll was $225K that year. Adele and I took home over $100K, another waitress took home 50K, one cook took home 25K, another 30K and various part time bus and dish people took home the rest. So who says you can't do a good business out of such a small location in the middle of nowhere?! When we left Chicago we wanted to downsize a little bit, so going from 5,000 sq ft to 800 sounded good. But before we knew it, we had lots of employees (10) and we were open 7 days a week! So, we downsized again and ran it with just ourselves. We closed for lunches and were open just for dinner Tuesday through Saturday from 5 to 7pm and guess what? We still made money! Rent is only around $1000 a month. Propane costs around $400 a month, electric $300, phone $100 and then there's insurance. Your biggest cost is going to be the food and drinks you serve. We have a full liquor license so we have lots of wine, some beers and quite a collection of premium spirits. The food is classic comfort food with a few twists. Of course, as new owners, you can change anything! Just make sure its good and priced for good value!
