My 800 square foot restaurant did $425K one year! So I did about half as much in sales in 1/6th the size restaurant! Payroll was $225K that year. Adele and I took home over $100K, another waitress took home 50K, one cook took home 25K, another 30K and various part time bus and dish people took home the rest. So who says you can't do a good business out of such a small location in the middle of nowhere?! When we left Chicago we wanted to downsize a little bit, so going from 5,000 sq ft to 800 sounded good. But before we knew it, we had lots of employees (10) and we were open 7 days a week! So, we downsized again and ran it with just ourselves. We closed for lunches and were open just for dinner Tuesday through Saturday from 5 to 7pm and guess what? We still made money!
