The Vintner's unusual blend of Tempranillo, Syrah, and Cabernet are the basis of its popular flagship "1629", named after the year vinifera grapes were first planted in North America. These wines, and single varietals of Cabernet Franc and Syrah, are fermented in stainless steel and are macerated in a highly controlled environment for as long as ninety days, then pressed in a horizontal bladder press at a maximum of 18 psi. The resulting extraction makes the wines long-lived and highly age able, dense, and complex. After two to three months of settling and racking, ageing begins and is normally for two years in French and Hungarian bariques, although the use of 3,000-gallon French oak tanks are also used to lessen the infusion of oak tannins. The red wines are not filtered and are bottled with the use of nitrogen. They are aged for a third year in the bottle before release. Red wines are bottled at a pH of 3.73-5 on average. Viognier, Riesling, and Gewurtztraminer are made into dry, crisp white wines that are fermented at very low temperatures for up to three months, usually bottled within four months of harvest. The retail prices obtained by the winery's wines are generally higher than those garnered by other producers in the region, although lower than California wines. The Meritage is priced at $28, the Cabernet Franc at $29, and the 1629 at $41. The Viognier is currently priced at $24.
