What type of appraisal (if any) should I get done if I am buying a food service business?

Potentially interested in buying 1-2 existing locations of a regional pizza franchise or 1-2 existing locations of a nation smoothie franchise.

I have an MBA, have conducted due diligence for $100M> companies in the corporate environment and am comfortable with financial statements. Completely new to restaurants, small business etc.

What should I ask for in terms of getting an appraisal? Where specifically should I look for the appraisers to add value?

Try a deli and/or diner. It's hard work, but good rewards and fun. Plus in the right area it is an excellent investment that will grow. And you can do this anywhere there are people. We doesn't like to eat great food? Also, know of 2 possible locations in Florida under a different name that may be available together or separate.
