Hi there...let me know if you like to lead into a Mexican original restaurant...
I am a selfteached guy who learned basic technics for food prep. 10 years ago at hotel medarano chef's school here in Aguascalientes and every since I have cooked 24/7 all year for my family and friends. In this time I have learned pre-hispanic food technics and I have been able to learn main Mexican dishes besides some international food. For example:
I am able to cook enchiladas, salsas, tacos, pambazos, tlacoyos, sopes, pozole, birria, menudo, quezadillas, tortas, mexican stews, soups, side dishes, dips, frijoles (beans), arroz (rice), mole, chimichangas, enfrijoladas, sincronizadas, etc. I am able to prepare mexican breakfast, lunch and dinners.
I can make very unique sauses (salsas) in molcajete with all type of chiles, from dried to fresh, from boiled to roast, from sweet to hot. With a combination of different ingredients like, tomato, tomatillo, red or green, guacamole in more than 4 ways, with "gusanos de maguey" (worms) or Oaxacan grasshopper, etc. I also know very well how to use Mexican spices.
I had a taco stand "el Tlacuani" (that means the cook in nahuatl lenguage) but I had to close because I was in a very outside town place and no people arround. And could not move forward because of $. But I have been perfecting mexican taco 3 years from now and I am sure you will notice a pre-hispanic touch once my tacos are made with masa de nixtamal handmade, molcajete salsas, fresh meat and not ordinary meat (suadero, lengua, tripas, machito, carne asada, chorizo, brisket, etc) to learn how to make this tacos I was inspired in original taquerias in Mexico City (I born there and live for 23 years), I also know how to make aguas frescas mexicanas, tepache and pulque curados...all this pre-hispanic bevereges.
I was invited to Ottaawa to set this kind of restaurant but my tourist visa was denied 2 times...by now I have US tourist Visa if there is a real interest from you.
